Raclette Just Got Big: the Big Z Swiss Raclette Burger Is Back

Holy Cow! Big Z Swiss raclette burger with melted raclette, Swiss beef and cured meat

Winter is coming, and in Switzerland, winter means raclette. From November 1 to December 31, the Big Z is back in every Holy Cow! restaurant: our Swiss raclette burger, with real Swiss raclette cheese melted over 100% Swiss beef. Raclette just got big.

Raclette is what Swiss winter tastes like: an evening with friends, cheese melting, that smell filling the chalet. We put all of that into a burger. No “raclette flavour”, no sauce pretending to be cheese: a real slice of Swiss raclette cheese, melted over the patty, just like it’s scraped at the table.

Raclette, a Swiss tradition

Raclette comes from the canton of Valais. Its name comes from the French verb racler, “to scrape”: half a wheel of cheese is heated, and the melted part is scraped straight onto the plate, with potatoes, pickles and cured meat. Today, raclette is one of Switzerland’s favourite dishes as soon as the cold sets in. The Big Z pays tribute to that tradition, burger-style.

A real raclette burger, made with real Swiss raclette cheese

The Big Z is the raclette burger the way Switzerland loves it:

  • Melted Swiss raclette cheese, generously poured over the patty
  • 100% Swiss beef, ground and grilled in our restaurants
  • Cured local meat, just like on a traditional raclette platter
  • Crisp lettuce for freshness
  • Brioche bun baked fresh every morning by our regional bakers

Everything you love about a Swiss raclette, between two buns.

Even better as a meal: get your Big Z with our Swiss fries and a cold drink, like our peach iced tea, an original Holy Cow! recipe.

Our Swiss raclette comes from the Piller cheese dairy in Semsales

Great raclette starts with great cheese. Ours comes from the Piller cheese dairy in Semsales, in the canton of Fribourg. A Swiss raclette cheese that melts beautifully, stretches, and has that taste you recognise instantly. Swiss cheese, Swiss beef, local bakers: the Big Z is a raclette burger that tastes like Switzerland.

Why “Big Z”? Z for Zermatt

The Z honours Zermatt, the village at the foot of the Matterhorn. Zermatt is in Valais, the home of raclette. The Alps, skiing, chalets, a raclette after a day on the slopes: the Big Z is Swiss winter you eat with your hands.
